Ingredients
1 can (14 oz) young green jackfruit in water or brine (not syrup), drained and rinsed
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1/2 cup vegetable broth
1/2 cup barbecue sauce (vegan)
1 tablespoon tomato paste
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon black pepper
1 teaspoon apple cider vinegar
1 teaspoon maple syrup (optional, for sweetness)
Salt, to taste
Instructions
Prepare the Jackfruit: Drain, rinse, and pat dry the jackfruit. Use your hands or a fork to shred it into a pulled pork-like texture.
Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3-4 minutes until soft. Stir in the minced garlic and cook for another 30 seconds.
Cook the Jackfruit: Add the shredded jackfruit to the skillet, along with the smoked paprika, chili powder, cumin, black pepper, and salt. Stir well to coat the jackfruit with the spices.
Simmer: Pour in the vegetable broth and tomato paste, stirring to combine. Let it simmer for 5-7 minutes until most of the liquid is absorbed.
Add the Barbecue Sauce: Stir in the barbecue sauce, apple cider vinegar, and maple syrup (if using). Cook for another 5 minutes, allowing the flavors to meld. If you prefer crispy bits, let it cook a little longer until slightly caramelized.
Serve & Enjoy: Remove from heat and serve immediately on toasted buns, in tacos, or over rice bowls. Add coleslaw or pickles for extra crunch!
