
Carnivore Cheesecake Recipe

Ingredients
16 oz (2 blocks) full-fat cream cheese, softened
2 large pasture-raised eggs
4 tbsp grass-fed butter, melted
2 tbsp beef gelatin (optional, for firmness)
1 tsp vanilla extract (optional, for less strict carnivores)
2 tbsp powdered egg white or dried colostrum (optional for extra protein)
Optional crust: 1/2 cup pork rinds (crushed) + 2 tbsp melted tallow
Instructions
Preheat oven to 325°F (163°C).
In a large mixing bowl, beat cream cheese until smooth.
Add eggs one at a time, mixing thoroughly.
Mix in melted butter, beef gelatin, and any optional ingredients.
For a crust (optional): press crushed pork rinds and tallow into a greased 6-inch springform pan.
Pour the cheesecake batter into the pan.
Bake for 35–45 minutes or until the center is set but still slightly jiggly.
Let cool, then refrigerate for at least 4 hours or overnight.
Serve chilled—optionally topped with whipped raw cream or beef tallow glaze.
