Doctor Pizza

Starbucks’ famous lemon loaf is a favorite among coffee lovers, but it’s often packed with sugar and calories. If you love the bright, zesty flavors of lemon but want a healthier alternative, this homemade version is the perfect solution. Made with wholesome ingredients, this healthier lemon loaf is just as moist and flavorful but with less sugar and more nutritious swaps.

Ingredients:

For the Loaf:

  • 1 1/2 cups whole wheat flour (or almond flour for a gluten-free option)
  • 1/2 cup honey or maple syrup
  • 1/3 cup Greek yogurt (or unsweetened applesauce)
  • 3 large eggs
  • 1/4 cup coconut oil or olive oil
  • 1/4 cup unsweetened almond milk (or any milk of choice)
  • 1/3 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Healthy Glaze:

  • 1/2 cup powdered monk fruit sweetener (or coconut sugar blended into powder)
  • 1-2 tablespoons fresh lemon juice
  • 1 teaspoon unsweetened almond milk (if needed, to thin out the glaze)

Instructions:

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with a little coconut oil or line it with parchment paper.

Step 2: Mix Wet Ingredients

  1. In a large bowl, whisk together the eggs, honey (or maple syrup), Greek yogurt, coconut oil, almond milk, lemon juice, lemon zest, and vanilla extract until well combined.

Step 3: Combine Dry Ingredients

  1. In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.

Step 4: Combine Wet and Dry Mixtures

  1. Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix.

Step 5: Bake the Loaf

  1. Pour the batter into the prepared loaf pan and spread evenly.
  2. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 6: Prepare the Healthy Glaze

  1. In a small bowl, whisk together the powdered monk fruit sweetener (or coconut sugar powder) and fresh lemon juice. Add a teaspoon of almond milk if needed to reach a pourable consistency.

Step 7: Glaze and Serve

  1. Once the loaf is completely cool, drizzle the lemon glaze over the top.
  2. Slice and enjoy with your favorite coffee or tea!
